Whole Grain Sourdough
There are a couple of things about bread and life in general that I think are generally true:
1. Most store bought bread is still junk.
2. Most people are super busy. Too busy, they feel, to bake their own quality bread.
Even though the famously easy and popular no knead bread baking method has been around for many years now and has converted many baking newbies into artisan masters, I still often find myself trying to explain to people that they too can fit bread baking in their hectic lives.
I realized that my proselytizing days clearly weren’t over and decided to create a series of videos in the hopes of luring a few more people to my world.
As easy as no knead baking is, a simple tweak or two to the basic recipe can make it even easier. Showing how to adapt the recipe around a busy lifestyle is an equally important component of my mission.
My easy bake series attempts to distill bread baking to its bare essentials and focus on what I think is all you really need to know to make good bread for you and your family. In many cases, to get certain results or to perfect a particular recipe, bread baking can be complex and challenging. This series is more about gaining confidence with winging it, within reason. You can produce a loaf that might not turn out the same every time but will almost always be praiseworthy, enjoyable and nourishing.
The following supplement video covers a few simple tweaks to lighten up this bread some, for when you’re in the mood for something not quite so hearty. I don’t know how these videos end up being so long (besides me being way too long winded), but I figured I’ll leave it as is since the main point of the video is to demonstrate baking largely by feel. I’m counting on conveying that feel visually, ad nauseam ;-).
Next up, our Episode 2 will be a non sourdough variation of this recipe. It’s even easier and less time consuming and will likely appeal to a broader fan base.
Episode 3 will feature a loaf ideal for sandwich making. A favorite of our 4 year old grandson.
Episode 4 uses the same dough as the above sandwich bread recipe to make a couple of all time favorite variations.
The theme of all will be something to the effect of “close is good enough”. Or maybe “everyone’s a winner”.
