Savory Stuffing Sourdough Bread
One of my all-time favorite side dishes is stuffing. Yet I eat it only at Thanksgiving, and life is too short to not enjoy your favorite dish more often. So I created a sourdough bread that combines the essential flavors of my family’s Thanksgiving stuffing with the health benefits of sourdough and the convenience of a loaf of bread.
This Savory Stuffing Sourdough is delicious toasted and buttered, and amazing as the bread for a sandwich. Any time of year.
The key to this recipe is the mirepoix (French) or sofrito (Spanish) and its additional herbs. Many cultures have a variation of commonly sautéed vegetables and herbs, and every cook has their personal take. Here are my sofrito ingredients for stuffing — a combination of my mom’s Greek-Argentinian cooking and my dad’s New England tastes: garlic, onion, celery, sage, thyme, black pepper and salt.
