    This is the first mixer I have had. I have been mixing by hand for a few years, but as my baking volume increased I thought it was time to try a mixer. I researched all the popular brands pros and cons and this machine had high marks . Fortunately I found one on cragslist so I got a great deal. There is definitely a learning curve with mixers , getting a feel for them and how they treat the dough. My first attempt at some pizza dough resulted in a mucky mess. I have since tried several types of artisan breads, croissant dough, cookies, pizza dough. I guess I would say this , you do get better gluten development and good incorporation of various ingredients, but for me , i feel i pay the price in clean up. I find it hard to clean around the center stem and the sides. the dough hook is easy to wipe off however. The instructions of adding flour until the dough pulls away from the sides is not good practice because you cannot control the hydration of the dough. If I want a 85% water ciabatta, then i don’t want to keep adding flour. So if you have a very stiff dough its easy to clean but if you have a wet dough its a pain. I did buy the new dough hook extender which does help a lot with smaller batches and i even use it up to 1kg of dough because it helps prevent the dough from winding around the center post. I have a friend who is also a ” by-hand “mixer and just got a new KA and was saying the same thing about the learning curve.
    Pros – yes a work horse, handles heavy doughs well, easy to clean with stiffer doughs. Gets good gluten development with 1kg of dough in 5-8 min
    Cons: difficult to clean wetter doughs, there is a learning curve – don’t expect to make great breads first time around.
    Tip : buy the dough hook extender. You can see the breads and pizza I have made with it at : for posts starting Christmas 2014 – older posts are all mixed by hand.
