Skepticism turned to praise when the Brød & Taylor proofer rescued me on numerous occasions when I needed to speed fermentation to meet a late bread baking request.

Plus it’s no longer a nuisance when a recipe calls for steady proofing at an exact temperature which doesn’t happen to exist in our household. The Brød & Taylor Folding Proofer offers home cooks something they’ve never had before — complete control, foolproof temperature management, and predictable results. It’s a convenient fold-out box that is easy to use (it will accommodate a full-sized mixing bowl of dough or loaf pans) and is convenient to store out of the way when not in use.

Radiant heat is generated by the aluminum base plate. Digital controls provide temperature settings from 70-120ºF (21 – 49C). Optionally, humidity may be increased by using the included water tray. The Proofer is calibrated to maintain the temperature of its contents at the set point, not just the air inside. This is an invaluable baking tool, particularly for those who live in cooler climates.

    This bread proofer is great. I use it to get the dough to rise when the temperature is low. This means all the time except summer here in the Boston area. I also use it to make yogurt that tastes a bit better than many store bought yogurts. The only complaint I have about the proofer is only the F temperature is displayed. There is no button to push to convert the F reading to C. Also be sure you pay attention to the dimensions as not all dough buckets will fit.

    I don’t know how anyone gets along without this proofer. I make Yogurt, and this works wonderfully. Bread Rise is spot on for me. I also found I can use my folding legs cookie rack in this when I make Cinnamon Rolls for the last rise. However, I have to keep my eye on the bottom rack, as my recipe rises very high and makes a mess if I get lazy on the watching it part…I just love it. Best Mother’s Day Gift I have received from my Son….to date.

    When this arrived I set it up very easily. It has limited instructions, which I found perfectly concise. Straight forward. On/Off button and arrow up (to increase temperature) or arrow down (to lower temperature.) It is sturdy, heavy duty plastic. There are not many pieces. I count all of these as advantages.

    The temperature is measuring accurately for me, even though my counter is in front of a window (it’s draftier there in Winter.) The 1/4 cup of water that it calls for to regulate the humidity was quickly evaporated here, so you might have to keep an eye on that. So far so good!

    Calibrate this thing! Just got one. The first time I used it to make yogurt, the actual temp was 8 – 9ºF higher that the set temp. Be sure to check it with a thermometer.

    It works! This proofer maintains a perfect temperature for the optimal rising of breads. I live in a 150 year old house, and despite drafts (and a brutally cold winter), my breads, starters, and leavens all rose beautifully. Two oblong proofing baskets (purchased from Breadtopia) fit in perfectly. The proofer also holds a round, 6 litre Cambro bucket (that’s what I use for my dough to rise). It’s a great size and a functional product. Highly recommended.

    I was worried this was a silly purchase for a novice and occasional baker. But it is really improving my baking by eliminating one of the most frustrating vaiables, temperature. As a result, I am baking more, with more confidence. It is awesome for sourdough, by the way.

    Fantastic! My kitchen is never the right temperature for bread proofing! This unit is great, and I have perfect results every time. I have had it now since it first came off the assembly line. I melt chocolate, make yogurt, and even soften hardened wax out of my candle holders of all sizes. I put my largest glass French mixing bowl filled with dough in the proofer. Talk about proofing, it is just fantastic! I have only one complaint. It should have been two inches wider, so than I could fit my all my USA pans in it. It is just shy of fitting my baguette pan and hamburger and hotdog bun pans in it. However, everything else fits, even my largest pan de mie bread loaf pans. You won’t be sorry if you get this.
