I’ve been fermenting my dough in a big opaque bowl and always had trouble knowing when the dough had doubled in size, which often led to over proofing. Now there is no guess work. I put the dough in this bucket, mark the dough line on the side with a dry erase pen and can see very clearly when the dough has doubled. Duh. Why didn’t I get this sooner?
