I’ve used one of these proofing container for years to store my starter in the fridge the second is used during actual bread making. Despite being air tight, it works perfectly for me for long term storage on the top shelf inside the fridge for my Breadtopia original starter that is now over 15 years old since receiving. I normally refresh with about 3/4 cup tired starter, 1 cup water to 2 cups flour (yes I know this is not the proportions one is normally given, but it works for me)

Not something that’s necessary and I usually try to avoid plastic, but this makes things easier. Transferring the dough to the bucket means the mixing bowel can be cleaned quickly. The translucent plastic and the rulings make it easy to see how much the dough has risen. The dough doesn’t stick to the bucket so it’s easy to remove the dough after it finishes rising. Cleanup for the bucket is literally a few seconds. Let the dough dry on the bucket and then just brush it off the plastic.
Only thing to note is that 2 quart size is good for 4 cups of flour. I just ordered the larger bucket for larger recipes.
