Just prior to the COVID-19 crisis, Breadtopia moved to a new facility and now, due to health safety concerns, all organic certification inspections have been put on hold in our area. Our prior facility was certified organic and our new one will be as soon as inspections begin again. Until that time, know that we are still sourcing exactly the same certified organic grains from the same producers we always have, and we are packaging and milling with the same procedures we have always used. We just can’t call it “certified organic” until we can get our new facility inspected and certified.

kamut wheat stalksKamut® is an ancient grain and the brand name for khorasan wheat, a large amber wheat grain closely related to durum. Kamut is appreciated for its smooth, buttery, nutty flavor, and its high protein and nutritional content.

It contains a high mineral concentration especially in selenium, zinc, and magnesium with 20-40% more protein compared to modern-day wheat. It has a higher lipid to carbohydrate ratio, which means the grain produces greater energy and has a natural sweetness to counterbalance the occasional bitterness present in traditional wheat.

Kamut grain is naturally resistant to pests and can be more easily grown organically than most other types of wheat. This grain is “untouched” by modern plant breeding programs which appear to have sacrificed flavor and nutrition for higher yields dependent upon large amounts of synthetic agricultural inputs.

Even though this wheat variety contains gluten, it has been found to be more easily digestible by people who may have slight allergic tendencies. If you are allergic or sensitive to traditional wheat, this may be an acceptable alternative, but do check with your doctor first before you try it.

Kamut’s flavor and nutritional attributes make it excellent in breads, cereals, cookies, crackers, pastries, waffles and pancakes. The actual wheat grains can be soaked and used in salads. Kamut is also available as freshly stone ground kamut flour and used to make superior pasta.

Note: Since this flour contains wheat germ and wheat germ is an oil, this flour will not keep for as long as typical commercially milled white flour. Do not purchase more than you expect to consume within a few months. We recommend keeping your flour in airtight packaging or container and storing in a cool place or preferably the refrigerator or freezer.

    I’ve been experimenting with different wheats, just to get a feeling for the different flavor and textures. Kamut has proven a wonderful flour — it feels finer and softer out of the bag, and creates a more consistent, velvety, springy crumb. The picture here was a mix of high protein white, kamut, and einkorn (200 g, 200 g, 100 g, 75% hydration) — the flavor is very nice (don’t have a working vocab for flavor yet?), the texture is just about perfect for my tastes, and kamut seems to add this textural element, even when only 100 g of the total recipe.
