La Cloche Bread Baker- The real secret to great bread every time.

The La Cloche unglazed ceramic bread baker is our all time favorite bread baking tool. We’ve been using one in our kitchen for over 20 years and the oblong model for nearly as long. Absolutely wouldn’t be without them. They’re an easy and reliable way to produce true crusty and quality artisan style bread in an average home oven.

The La Cloche natural clay stoneware baking dish and domed lid will simulate a hearth oven in your kitchen.

The moist dough within the cloche creates the steam needed to produce a delicious bread with a crackly, golden crust and a more open crumb. Absolutely eliminates the need to spritz your bread, pour water in a hot skillet or any such thing to get the nice crust you are after.

    I don’t know why I waited so long to get this amazing baker! After reading reviews for more than a year, I finally order it over the holidays, and I’m finally getting the crusts my family keeps asking for. The crumb is lovely on all the types I’ve tried so far, and my sourdough (also from breadtopia – it’s great!) has professional holes and and a perfect, chewy crumb. I was worried about all the different comments on seasoning, but since I wanted to use the preheat method and I HATE burned cornmeal in my oven, decided to cut an old silpat to fit the bottom and let it go at that. Worked just fine, but then I read a great suggestion to use the top of the La Cloche sitting directly on my pizza stone. That has simplified the whole thing for me. I let the shaped loaf rise on parchment paper on a peel, preheat the dome, on the stone, then slide the parchment and loaf on the stone and plop the dome on top. Much easier than getting the loaf into the bottom of the baker. Results have been perfect! Thanks to all for the reviews, suggestions, and comments.

    If you make bread or want to learn to make bread this product is da bomb! I learned to bake bread from Breadtopia and this La Croche turned my regular ho hum loaf into art. Must have. But, I also found that I love making pizza in the La Croche as well for the same reasons. The crust gets golden and crunchy and also the cheese doesn’t burn because it is covered. What I do is leave the pizza in a 500 degree oven for 20 minutes and then take the cover off and watch it until it looks good. I like it better than the pizza stones.

    I would second what Joe said. I have used it sporadically.The baker works very well. I have handled it carefully, but ithas cracked almost through and is probably unsafe to use. I would have expected to bake many more loaves in it. A grade on function, but questionable durability.

    2 year review: In Jan. 2012 I began baking artisan bread 2-3 times per week with LaCloche which has never disappointed us with anything less than excellent results. I put it on the middle rack in a cold oven and allow the temp to come up to 375F, set the countdown timer to 65 minutes, and let it do what it does best until the timer rings. I find the best time to place it in the oven is when the dough has expanded to fill the entire bottom of the base. That tells me the dough is ready to give a full spring. After removing the bread I am careful to place LaCloche back in the oven and allow it to cool down with the oven off. The unit has never been rinsed or washed. My only regret is that we often skip dinner and just eat warm bread.

    Update – First Use: Amazing Results!!!
    Update to my review from 10/31/2013: I have now used this awesome baker for the first time and the results were GLORIOUS! BEST. LOAF.YET. We had fried ham sandwiches for breakfast this morning using this loaf (which I made last night)! DELICIOUS! I grilled my bread in my cast iron skillet (after I was done frying up the ham) and WOW! So good! Can’t wait to make grilled cheese sandwiches!

    I just used the baker right out of the box. I did sprinkle a bit of flour in the preheated bottom before I transferred my dough to it. But, I don’t think I’ll even do that next time. No sticking problems at all (which was a BIG RELIEF!).

    VERY HAPPY NOVICE BREAD BAKER am I!

    I highly recommend this baker. It’s worth the investment! Now, I just have to save some money up for one of those oblong bakers. :)

    I ordered my La Cloche Clay Baker (Round) via Breadtopia during the very early morning hours of 10/30/2013. I just received it today (IN PERFECT CONDITION!), 10/31/2013. It’s mighty nice to live so close to Iowa! :)

    Quick Question/Verification: I’m assuming that my interpretation and understanding that the use of this baker as strictly a bread baking vessel using ONLY the “preheated” method for use requires absolutely no preliminary seasoning of the baker at all, correct? (Regardless of what the manufacturer instruction/recipe booklet may indicate.)

    I will update my review after I’ve baked my first loaf of bread in this beautiful baker!

    I’m just so darned excited that I got it so quickly and in perfect condition (the packaging was excellent)!

    I’d read the packing horror stories from other sites; I was reassured by this site’s directly addressing that issue – and ordered the cloche. The manufacturer’s boxing was really good – and the Breadtopia packing was REALLY good. So – it arrived in the correct number of pieces.

    The baking. I ruined my oven in the past trying to do steam. Broken glass, steamed electronic controls – the whole sad story. After one run with the cloche, I’m happy, the oven’s relieved and the bread looks great. Wish I’d known about this 20 years back.

    Received my La Cloche today and have not used it yet but this review is about how it came packed. I have read horror storied about La Cloche bakers coming broken on other sites and forums that sell them, this baker was not only packed by Breadtopia so it in no way could move around in the shipping box but the factory packing was so tight that there was no way this was going to get damaged. Kudos to both the Mfg. and also Breadtopia.
    Will bake bread either tomorrow or Monday and write a review about how it bakes.

    Got this as a birthday gift. Took it out of the box and immediately made a loaf. I’ve been baking bread for many years but my biggest complaint was not being able to get a crispy crust. Well, this clay baker solved the problem. My bread had a beautiful golden crust. In fact, I could hear soft crackling as the loaf cooled. Don’t hesitate, you won’t be sorry. As soon as the rectangular one is back in stock I am going to get that one also. I am one happy baker.

    We’ve been using the no kneed bread method for over a year now. The bottom of the clay baker broke some time within the first 3 months of using it. It works very well when not broken. We went on using it with the two broken bottom parts unitl the dome cracked too.

    The La Cloche arrived today. I read the reviews before purchasing and paid particular attention to the comments about seasoning of the stoneware since one of my pizza stones cracked about 3 years ago. After that happened I found that by coating the pizza stone with peanut oil it will turn a dark brown not quite as dark as a cast iron skillet, but nothing sticks, and the peanut oil can take high heat without smoking up the house. Without the seasoning the stones get dark blotches and look unsightly especially with a crack running through it. So I made two loaves tonight after coating the stone and heating it up to 350 and then cooling down to room temp. First sourdough loaf was placed in the La Cloche (French for bell) cold. The oven was set to 375 and I baked the bread for an hour after the set temperature was reached. Perfect crisp thin crust with golden color and wonderful springy crumb. The second loaf was placed into the hot stoneware, covered immediately and placed back into the same 375 oven for 1 hour. I’m jumping for joy because the bread rose to fill the entire dome, same results as the first loaf only better. I’ve had a passion for the perfect bread for the past 15 years and it doesn’t get any better than this.

    Definitely improved the crust of my breads. However, after a year of baking once a week, the bottom developed a crack which steadily lengthened until it was about to crack apart. It was never dropped.

    I’m not kidding! I’ve been making bread for 30 years, and the crust, crumb etc were always good, but never perfect. Now my lame GE oven is working like a steam oven.

    People don’t believe I baked the loaves that I’ve made using this and the oblong clay baker. They are wonderful; you can’t make a mistake if you use these. I look forward to seeing each loaf that comes out because each one is truly unique and a work of art. It’s always a pleasant surprise to see the finished product. I don’t think I got a recipe book with mine, but the recipe I use works fine, and I really enjoy baking with these wonderful little ovens.

    I just got the round and oblong bakers in the mail today, about a week and a half after ordering it online. I was worried about the shipping, whether they would arrive in pieces like the horror stories I’d read online, but I couldn’t believe the care that went into packaging! The bakers were in their boxes from the company, with average to adequate padding, but then both boxes were in a large brown box, with so many packing peanuts and paper and air bags that I’d be surprised if the boxes even felt a jolt during the trip! They arrived without a scratch. I would definitely order from Breadtopia again; they have gained my unqualified trust!

Truly a work of genius, the La Cloche is so good it’s tempting to say that every bread baker has to have one. Which isn’t true, but once you’ve used it, you’ll never look back.     Eric, I just wanted to drop you a line and say THANK YOU very much. I
    received my purchase on Friday. I have only been baking bread earnestly for
    about a year and a half now. I have purchased books read articles, hunted
    the internet for any info that would help me to make a decent loaf of bread.

    I was resigned to using cake pans filled with water at the bottom of my
    oven, having to religiously open the oven and spray my loaf, only to find
    that I didn’t really get the crust I was looking for, and holes, well I had
    pretty much given up on being able to produce a decent hole. It got to the
    point, that if I got a hole as big as a broken pencil tip that I was doing
    great. But then I came across your website, I viewed your FREE let me say
    that again (FREE) video and that’s when I ordered the clay bakeware.

    I want to say that after my first loaf using your no knead recipe and clay bakeware
    that I got an amazing loaf of ARTISAN bread. And the holes, they’re huge.
