If you’re new to bread baking you may be pleasantly surprised by how easily you can produce an amazing loaf of bread that would impress even the most discriminating bread connoisseur, the kind with a crispy crust and a chewy inside with big open holes. Or if you have written off bread baking for all the effort you thought was necessary, take heart. Tomorrow you can be slicing open some of the best bread you’ve ever tasted, without having broken a sweat to make it.
Are you familiar with the “no knead” method, recently popularized by a New York Times article on the subject? It takes the complexity out of the baking equation without sacrificing quality. You will not have to quit your job or send your kids to boarding school to create and enjoy one of the great gastronomical experiences – wholesome fresh baked bread, the most satisfying and fundamental of all foods.
Start with the yeasted no knead method and move on to the sourdough version of the same if you want. Later, you may enjoy taking a more challenging route with more traditional bread recipes. I’ll have those too.
In time, I’ll post videos on a wide range of interesting (and of course delicious) baking adventures ranging from sourdough chocolate cake to Indian chapattis. You’ll see an emphasis on the use of wild yeast leavening (sourdough starter) in lieu of commercial yeast and an effort to include the use of whole grains when appropriate for their considerable health benefits.
