The Best Sourdough Stuffing
Despite baking sourdough bread for many years, last year was the first time I made Thanksgiving stuffing with homemade sourdough bread. Wow did it taste amazing! With fewer people gathering in my kitchen due to the pandemic, sharing stuffing ideas and results in the Breadtopia forum was so meaningful. I built my recipe off Our Favorite Buttery Herb Stuffing by How Sweet Eats, using sourdough bread, a few additional ingredients, and my favorite herbs for stuffing, some dry and some fresh (what I could find in the store and my pantry).
Here’s my recipe, but you should use your own flavor and texture preferences as well, and check out what the other bakers did in the stuffing forum thread too.
Step one, of course, is to bake a couple loaves of sourdough bread. You’ll need at least 1 1/2 loaves (roughly 1 kg of bread before drying), and Eric’s No Knead Sourdough Bread recipe is a good hand’s off choice for busy Thanksgiving prep. You can make the loaves days or even weeks ahead. Slice and cube the bread, let the pieces dry out on a baking sheet, and throw them into the freezer in a bag. If you’re in a rush, you can dry out the bread cubes in the oven at low heat 300°F.
For the home bakers who already have various frozen bread slices in their freezer, estimate about 1 1/2 loaves worth, defrost, cube, and dry out before Thanksgiving morning. I plan to be working with a freezer stash combination of rye, sprouted spelt, and white kamut loaves this year.
