Chia Pudding Sourdough Bread
I developed this recipe during the heat of a warm summer and my initial experiments with ingredients and timings for the reclipe led to our accompanying technique post called Summer Bread Baking Tips.
I made the first bread shown in the galleries below with hard white spring wheat and the second with yecora rojo wheat. Both breads are 100% whole grain flour along with a very large amount of chia seeds. This makes a very chewy, crackly bread with a significant amount of moisture that doesn’t disappear even with toasting. It is delicious for sandwiches, sweet and savory toasts, and goes well dipped in olive oil and labneh (salty plain yogurt). Please note you can use whatever flour you prefer. Just make sure you reduce the water in the recipe if you choose a wheat variety with less gluten strength or you use flours that aren’t whole grain.

Below are photos of the hard white spring wheat dough which expanded by less than 50%, but the dough was quite warm so fermentation continued at a rapid pace during the bench rest and the 20-minutes room temperature proofing before refrigeration. As a result, the dough was overproofed by morning.
Below are photos of the Yecora Rojo dough which expanded less than 50% during the first rise and had a short bench rest. The dough was warm, so I proofed it at room temperature for only 1 hour and then put it in the freezer for 30 minutes while the oven preheated. The shape was taller than the loaf above but the crumb was tighter.

Chia Pudding Sourdough Bread
Chia pudding sourdough bread is tasty and quite unique in its chewy and crackly texture. It works best as toast, remaining spongy and pliable, because the chia seeds hold so much water. In fact, the dough is 104% hydration including the water from the chia pudding and sourdough starter.
