Emmer Wheat Pie Crust (Blueberry Filling)
In this recipe, emmer wheat makes a nutty, flavorful, and flakey crust that’s also full of fiber and nutrients. Emmer was one of the earliest grains to be cultivated, and compared with modern wheat, it is high in resistant starch, carotenoids, and other antioxidants. This pie crust is so tasty and it pairs perfectly with fruit fillings like the blueberry one in the recipe below.

Many people make pie by pouring their homemade filling into a storebought frozen crust. This saves time, but a homemade crust, especially with fresh milled ancient wheat, is so worth the extra effort. Making this entire pie — crust and filling — takes less than an hour. (Of course, part of that speed is due to using a fruit you don’t have to peel or slice.) Here’s the time breakdown: You need about 5 minutes to measure and mix the dough ingredients. While the dough chills for 30 minutes in the refrigerator, you can prep the filling, grease your pie plate, and start the oven preheating. Rolling out the chilled dough into top and bottom rounds takes another 15-20 minutes, and assembling the pie and wrapping it with a pie shield rounds out the hour. For all this amazing flavor and fresh-baked aroma, that’s time well spent.

Emmer Wheat Pie Crust (Blueberry Filling)
This blueberry pie with an emmer whole grain crust is a delicious combination of fresh flavors. The filling is not too sweet because of the wild blueberry component, and the crust has a nuttiness from the emmer that goes so well with fruit. The dough is also surprisingly easy to roll out with a little help from a flour duster and bench knife.

* You can make this crust with other wheat varieties. Simply add water slowly and check the dough. For einkorn whole grain flour, I used 6 Tbsp water compared with the 10 Tbsp for emmer wheat.
** Mahleb is an optional spice you can add to the crust or filling that is made from the ground kernal of a type of cherry. Mahleb smells like almonds and cherries both, and it's used in Middle Eastern and Greek desserts and baking, and also in a Syrian cheese called Tresse.
