Gluten Free Chocolate Chocolate Cherry Cookies
These double chocolate cookies are intensely flavored. The cocoa gives it a deep note balanced by the milk chocolate chips. The pecans add a lovely crunch and the dried cherries a sweet chewiness.
You can use different nuts and dried fruit for variations. I like to make these with walnuts or macadamia instead of pecans, and I’ll substitute dried cranberries or dried blueberries for the cherries.
Use a good quality cocoa such as Valrhona for a deep chocolate flavor.
