Maple Oat and Wheat Sourdough Bread
My favorite toppings on a bowl of oatmeal are maple syrup and blueberries so I thought it would be fun to make a whole grain sourdough bread with plenty of oat flour and maple syrup. (I left out the blueberries in favor of using blueberry jam on toasted slices of the bread.) This maple oat and wheat bread didn’t disappoint. It has a soft texture and a lot of oat and wheat flavor with just a hint of maple syrup aroma and sweetness.

Oat groats and bolles red wheat
Oat flour doesn’t have gluten, so bolles hard red spring wheat flour gives this dough strength and also adds a rich wheat flavor. Milling the relatively soft oat groats with harder wheat allows you to use a very fine setting without the risk of clogging the stones.
