Proofing BasketsAt Breadtopia we have a little bit of a fetish for bread proofing baskets (also called brotforms and bannetons). So we’re constantly looking for the ultimate proofing basket and we have tried all of them. For a time our favorites had been the European-made, coiled rattan baskets that we’ve carried in our store. They are very good quality, but also a bit expensive.

We’ve looked at lower cost samples from Chinese suppliers, but the quality is noticeably inferior (both the rattan quality and the manufacturing quality) and we didn’t want to use them ourselves so that means we couldn’t sell them to you either.

The best rattan in the world comes from Indonesia. In fact, Indonesia is the world’s leading exporter of raw rattan and some of that raw Indonesian rattan is what the European proofing basket makers are using. But when an Indonesian rattan farmer is standing in his warehouse deciding which rattan to send to Slovakia and which to send next door to his brother’s basket making workshop, where do you think the best stuff goes?

Proofing BasketsAnd speaking of that basket making workshop next door, the culture of Indonesia is inextricably linked with handcrafts. Small craft shops are literally everywhere in Indonesia, and you could make a strong argument that the artisans of Indonesia (which is a huge percentage of the population) are the best in the world at making things with their hands.

All of which came together for us recently when we were very fortunate to connect with a small Indonesian handcraft company that specializes in rattan furniture and baskets who are now employing a group of native artisans to make all of our proofing baskets by hand from the incredible quality rattan supplied by local farmers.

Proofing BasketsBy working directly with our Indonesian colleagues and cutting out virtually all of the middlemen usually involved in the process (including the expense and extra carbon footprint of shipping rattan to Europe only to then ship that same rattan in basket-form to the U.S.), we are able to bring these truly exceptional quality, hand-made proofing baskets to market at much better prices than similar, machine-made coiled rattan baskets from other parts of the world.

We get great baskets at great prices and at the same time help to support a native handcraft culture engaged in producing sustainable goods. What a win-win!

Keep in mind that whether the dough is made of refined flour or whole grain flour will impact how much it expands in the basket, and if you’ve arrived at the dough weight with additions like nuts and raisins or actual dough — so the ranges above are approximations.

How to Use: Dust the proofing basket with flour and the risen dough drops easily onto your baking surface. For proofing very wet doughs, as called for with the popular no knead bread recipes, for example, the optional cloth liner (see below) is the simplest solution. Working flour (rice flour is particularly effective) into the cloth liner will release wet dough.

Care Instructions: Cleaning the Brotform proofing basket is usually just a matter of tapping it on the edge of your kitchen sink. If necessary, rinse it out with hot water with your faucet in spray mode. Shake off excess water and place upside down over still warm oven to dry quickly. Don’t use soap.

    The one I got is poor quality. It has badly splintered areas inside that I think will cause the dough to stick, as well as “threads” sticking out that I’d be afraid would get into the bread. I would have hoped quality-control would catch these. It’s not worth paying to ship back so I’ll try it, but only with a liner. Disappointed, based on all the other great reviews.

    Works great! Bread baking is so much easier with one of these beauties! I just used it for the first time with a batch of no-knead sourdough dough for the second proofing and it worked PERFECTLY! I rubbed my bread flour into the inside surface of this basket and dumped my dough into it and let it do it’s second rise for 1.5 hours. It transferred without sticking to my preheated bread baker. Just plopped right into the bread baker without any problem at all! YAY! So very happy with this purchase. To clean it up, I just whacked it against the inside of my kitchen sink to get the excess flour out of it. Easy peasy. Wonderful basket! I’ll definitely be getting the oblong basket, too! Oh, and the little impressions on the bread dough make it look so professional! Attached is a picture of the loaf I baked. 🙂

    I have used mine for all of my round breads of late. It does release as everyone claims. I was really doubftful about it, with the no knead breads since the dough has so much more moisture. Not a problem. What I love most, is the professional look the bread has after baking. I took a loaf to a friends dinner party last night. It was the talk of the meal, with every one taking pictures of it.

    I feel like a pro! I finally caved in and bought it after trying several alternatives with what I had on hand. It was a lot stronger than I expected, was very well made and more importantly, it really works well! I used a very sticky dough to test it out with, some spray oil and a good dusting with brown rice flour. The dough fell out so easily I almost dropped it. The rings of flour on the loaf looked fantastic. Well worth the investment.

    Two will fit! Purchased one round and one oblong proofing basket. Wonderful look and the good thing is that I can bake two loaves, one of each shape, side by side on my pizza stone. Yes, the loaves did touch as they continued to rise in the first few minutes in the oven, but they were easily pulled apart after baking, each loaf maintaining its form. Excellent addition to any home bakery.

    LOVE IT! This basket has worked very well for me. It turns out gorgeous loaves and is very easy to clean. I would highly recommend it. I will be ordering the Oblong baskets next to allow for baking more loaves at once. I am sure it will be just as nice as the round.

    Wish I’d had it sooner – I’ve spent over 30 years baking bread without one of these beautiful proofing baskets – the past 3 months with one have been the best baking months of my life. This little basket makes artisan bread so easily that I only wish I’d had one all along — my breads now rise better, go into the oven much more easily, and are shaped so perfectly that they emerged from the oven with glorious form and texture. Truly, these are among the best kept secrets in baking.
