Nevertheless, we have set ourselves to the task of building a better mousetrap and we’re ready for the path beating to commence.

Traditional rattan bread proofing baskets are great, but as with anything, they have their pluses and minuses. One of the primary issues that we hear about all the time is that wet dough can get stuck to them and when it does, it can be anywhere from somewhat to extremely difficult to clean it off. Aside from the annoyance, we’re all now very much more conscious of sanitary food preparation, both in the home and especially in a food industry context. For bakeries, restaurants, and other volume users of rattan baskets, another annoyance is the necessity to allow them to dry completely after use before you stack them together for storage in order to avoid the promotion of mold. And finally, one other issue with rattan proofing baskets that we’ve experienced more and more lately is availability. Nearly all rattan baskets are manufactured in Asia and especially for those of us in the US, just getting them here has become increasingly difficult of late.

We set out to solve all of these problems by designing and locally (USA) manufacturing a whole new concept in bread proofing baskets. We’ve leveraged advanced materials engineering using an eco-friendly composite material made of 30% recycled maple wood fiber and 70% certified food-safe, BPA and phthalate free polypropylene. It’s like plastic in all the good ways, but none of the bad ways. It’s amazing stuff with a really nice, natural hand-feel. It’s rigid yet flexible, extremely durable, and should last forever. And when you get dough on it, you can just throw it in the top rack of your dishwasher and you’re good to go.

We spent a good couple of years going back and forth with engineers and industrial designers getting the shape of the baskets just right. There were subtle limits in the interaction between the relief of the grooves and the angle of the walls. Too much relief and the walls flared too much. Not enough and we didn’t get the nice, cosmetic flour lines on our proofed dough. I have a file with a zillion images like this one. We tested an endless retinue of 3D-printed prototypes until we finally refined our way to designs that worked for both the manufacturing process and for proofing bread dough.

How to Use: As shown in the video above, dust the proofing basket generously with flour and the risen dough drops easily onto your baking surface. For proofing very wet doughs (as called for in popular no knead bread recipes), use the optional (well floured) cloth liner or follow the oil spritzing and flouring technique demonstrated in the video.

Cleaning Instructions: Rinse with water. Or put your banneton in the top rack of your dishwasher.

    These are great! I found I can spray with water instead of oil, then dust with rice flour and wheat flour. I give a quick shake before turning over and dough releases easily. Dough hydration over 80%.

    It took me a little bit to get used to it but it it works very well. Gets the bread shaped very well. The banneton is pretty easily cleanable and I haven’t had too many issues. There have been no issues with molding or with leaving the banneton in the fridge for fermenting. Already looking to get another one.

    These are fantastic. They hold up to toddlers helping with the bread making process and are washable! These work great with and without the liner, just be sure to add some flour either way. I love that they stack super well in my cupboards and are easy to clean.

    These are great. For easier cleanup I prefer to use a tea towel as a liner rather than oil and flour, but both methods work well.

    I reviewed these in early August when I first got them and was very impressed with them. Now that I have used them with some regularity, I believe they deserve a well deserved update. They simply outperform cane. Like many of you, I enjoy tradition and cane bannetons along with very nice French reed baskets with raw liners have been my go-to because that was the tool to be had. I’m very impressed with how they perform with the dough, but from a food safety aspect, they really can’t be beat. You get the performance and marking of a reed banneton and safe and secure clean up with no risk of rancid flour or moisture attaching the banneton that didn’t come out when brushing them out.
    For now I have 2 ovals and a whole slough of traditional proofing baskets, but when those go, their replacements will be these Breadtopia composites. From a cost perspective they are more than competitive with cane and miles cheaper than the French wicker baskets with their sewn in liners I have. My initial concern was that here were no linen liners available, but now, I could care less after using them. What an excellent product.

    I’m sold…as I wear out my cane bannetons, they will be replaced with these. They do everything they are advertised to do. What a great find. Linen liners would be the only extra necessary for when a smooth loaf is called for.

    I am very pleased with these. I’ve used them three times so far (just the oval ones though I bought two of the rounds as well) and each time, the loaves release very easily and the banneton cleaned up well. I’ve washed them using both dishwasher and hand scrub brush methods and both work great and hand wash was not hard to clean. They are definitely heavier than traditional banneton but not too heavy.

    The dough releases quickly – I’d say with more sudden release than what I was used to with traditional banneton. I have been making sourdough with a 80% hydration and 50% fresh milled whole grain in them and bake in clay bakers. I found that the oil spray/rice flour/AP flour coating I used didn’t leave as much “flour” look as what I used to get. I sprinkled and brushed a bit more flour on. I’m not sure if it’s the latest mix of whole grains I’m using or how the banneton is holding the moisture but I swear the crust is crispier than what I was used to and that’s a nice bonus. Of course with everything sourdough, it’s hard to know if that’s the reason. Regardless, I highly recommend this product.

    Love it. It works incredibly well with a sprit of oil and dusting of flours. I’ve had zero issues and it releases the dough easily every time. I’ve only used it a few times but I feel like I’m getting a lot better results than with a standard banneton and liner.

    After more than a decade of working with sourdough breads and testing dozens of bakers, bannetons, and various tools; I’ve finally found everything I need in this new banneton from Breadtopia. As Eric suggests I apply a quick spray of oil – followed by smoothing it out even with a paper towel and then sprinkling a little rice flour and wheat bran. Release is perfect for all measures of hydration. As the other reviewer suggest a quick wash with a soft vegetable brush and dish soap is easy and quick. I’ll never use a cloth-lined banneton again.

    I have at least seven bannetons and these are the best. I spray them with oil, flour them, and the dough falls out perfectly every time.
    And no fussy care. I wash them with dish detergent and a vegetable brush, rinse them, and let them dry in the drainer.
