Two bakers in one. The Breadtopia Combo baker functions as both a Dutch oven style baker and a cloche style baker. In Dutch oven style mode, the high sides of the baker shores up wet no knead dough, forcing an upward rise. Flip the baker over into cloche mode and the lid becomes the base for baking more conventional round or oval loaves (boules or batards).

    My bread no longer gets burnt on the bottom like when I used my dutch oven. I am thoroughly satisfied, have already used it 4 times. For not burning the bottom alone this is totally worth it, but I also like that I can do round or batard, I can bake on the lid or in the pot if I want it enclosed. I do preheat it, have gone as high as 500, and I have used parchment paper so far, because I read it can take a few uses for it to be consistent about not sticking

    Completely recommend this baker. Do be careful removing the lid, don’t let the steam get you!

    I love this clay baker! For the first year, I used it by preheating it before putting the bread dough in it. Now I put the bread dough in it (on parchment), place into a hot oven, turn on to 450F and bake for 1hr (for a 2 lb boule), taking the lid off for the last 10 min). The results are so good that I am not planning on going back to the preheating method.

    Love the clay combo baker. I’ve only used for bread. Baker is easy to use with or without parchment paper. Bread bakes evenly with fantastic crunchy crust and soft interior. The best part is definitely the crust. It doesn’t get as hard as when use water spritz or a pan of water so it’s much easier to cut (and chew). Very happy with this purchase. Breadtopia also has several excellent videos demonstrating use of their bakers.

    I was excited to find this unglazed baker since most glazed dutch ovens are full of lead and cadmium, plus they’re so heavy and hard on my wrists. When I picked up the unopened box I became very discouraged, it was so light I thought it was going to be a tiny pot. I was very surprised to find such a large pot that barely weighs anything. I have since baked several no knead breads in my baker and even baked an amazing focaccia in the lid. I do preheat the bread baker but sometimes my bread still sticks to the bottom. Is there something I can do about this without having to use parchment paper, I really don’t want to use parchment paper. Will it mess up my baker if I oil it? Other than this issue I am very happy with how beautiful this baker is and how great it cooks my breads.

    I found that my cast iron DO was making my bread darker on the bottom than on the top, way darker. It was also very heavy. I love the Combo Baker. My bread is a nice uniform color and the baker is so much lighter. My bread gets great oven spring. I have used it both ways (cooking in each part). but mostly put my bread in the deeper end because the top is easier to remove during baking.

    Received my baker yesterday and am loving it. I was initially so impressed with the care in packing, not a dink. The loaf I made first was proofed upside down in a floured brotform using a German cooky mold as a design. What a joy! I didn’t have to butter 450 degree cast iron and, as promised, no sticking to the pot since I preheated it. Cannot rave enough about this baker.
