Make your own high extraction bread flour with our 40 and 50 mesh flour sifters.

The “40” and “50” numbers refer to the number of mesh squares per inch.

High extraction (or bolted) flour is whole grain flour with some percentage of the bran sifted out. Great for when you want a lighter loaf yet retain the nutrition found in the germ.

It’s amazing how much coarse bran can be sifted out of a few cups of whole grain flour using this simple mesh strainer. It’s a reasonable alternative to an expensive grain mill attachment or purchasing a larger than needed quantity of high extraction flour and risk spoilage before you’re done using it.

For a finer flour texture, sift flour once though this 40 mesh sifter. For a super fine flour, sift again though the 50 mesh sifter (sold separately). It is fairly quick and easy to sift flour through the 40 mesh screen. You will end up with a flour texture that is quite fine, without “losing” a lot of material. The 50 mesh sifter, on the other hand, takes a good bit longer to pass the flour through and quite a lot of material is separated. Most people are fine with the results achieved from using the 40 mesh sifter only. But for those who want something approaching a 00 flour or cake flour, passing flour through the 50 after the 40 is the way to go.

    This sifter removed no more than 3% of large bran flakes from the stone ground hard winter flours from Community Grains in Oakland CA. It removed 7% from the rye flour from Breadtopia. I find these to be perfect for the loaf I like to bake.

    I milled turkey red wheat grains from Breadtopia and used their 40 mesh sifter to produce a lighter whole wheat flour. I used that flour in a yeast bread with 90% hydration that fermented overnight and made an excellent loaf of medium whole wheat bread with a soft, porous, crumb and tasty, hard crust. The fairly large amount of bran, left in the sifter, made great bran muffins. Every part of the turkey red grains were used.

    The #40 sifter makes it easy to remove the bran from home-milled flour. I find that it doesn’t make a mess as long as you take your time and use a bowl that’s sufficiently large. A second pass through takes out even more bran. I see a lot of bran muffins in my future….

    With the 40 mesh sifter it is easy to consistently make 75% extraction flour from hard white spring wheat. (Komo Mio mill at a fine setting.) A large diameter bowl under the sifter makes for a relatively neat process.

    The description of the 40 mesh sifter list’s it diameter as 9″. Wrong it’s actual diameter is 9 3/4″ at the base.

    This has saved my life. As I don’t have a mill to crack my buckwheat I’ve been grinding the whole seed up in my coffee grinder, then using this sieve to separate the hulls from the flour. It has saved hours of effort using various means of wind generated techniques to blow away the hulls. It’s taken a beating of late, and is sturdy and definitely worth the currency conversion pain and postage costs 🙂

    The 40 mesh sifter is built sturdily and works perfectly to create 85% extraction flour from whole wheat ground at the finest setting in my Komo mill. This flour is perfect for making pastries that are still light but have more flavor and nutrition than those using white flours.
