Make your own high extraction bread flour with our 40 mesh and 50 mesh flour sifters.

The “40” and “50” numbers refer to the number of mesh squares per inch.

High extraction (or bolted) flour is whole grain flour with some percentage of the bran sifted out. Great for when you want a lighter loaf yet retain the nutrient dense germ.

It’s amazing how much coarse bran can be sifted out of a few cups of whole grain flour using this simple mesh strainer. It’s a reasonable alternative to an expensive grain mill attachment or purchasing a larger than needed quantity of high extraction flour and risk spoilage before you’re done using it.

For a finer flour texture, sift flour though the 40 mesh sifter (sold separately). For a super fine flour, sift again though this 50 mesh sifter. It is fairly quick and easy to sift flour through the 40 mesh screen. You will end up with a flour texture that is quite fine, without “losing” a lot of material. The 50 mesh sifter, on the other hand, takes a good bit longer to pass the flour through and quite a lot of material is separated. Most people are fine with the results achieved from using the 40 mesh sifter only. But for those who want something approaching a 00 flour or cake flour, passing flour through the 50 after the 40 is the way to go.

    I’ve been trying to use a high powered blender’s dry container to mill whole wheat berries for the last couple of years. This sifter compensates for the blender not doing a perfect job, and should allow me to use fresh flour in all sorts of settings, including waffles, which don’t respond well to coarser ground flour. I definitely made the right choice going with #50 mesh instead of #40, as the end result is silky smooth, and nearly indistinguishable from store-bought white flour by feel. The sifter itself seems well made, and Breadtopia is the only place I could find a quality one with larger than a 6″ diameter.
