Grown in the highlands of Atlacomulco, the cónico rojo landrace is grown on the same farm as the cónico azul by Masienda’s partner grower Armando Guadarrama. It’s prepared in the same way as its blue cousin, but makes for a tortilla resembling a light-bodied, red wine with a soft, pliable texture that tastes earthy, grassy, buttery and delicious.
Now the cónico varietal can be tricky to cook. Don’t forget that it’s almost all starch, which means it may often become al dente in texture before the skins are fully loosened. You may struggle getting your tortilla to puff. It’s not you; it’s the cónico. The end result will always be tasty and visually striking.
All corn from Masienda is completely non-GMO grown on small farms using regenerative agricultural practices. It has never been treated with pesticides or fumigants.
