Heirloom White Chalqueño Corn — Chalqueño Blanco or Chalqueño Cremoso


Grown in the highlands of Tlaxcala, in the rich, volcanic soils moist with winter rain, the chalqueño landrace boasts the creamiest, softest and most buttery table tortilla. This is God-tier masa, people. (The pillowy texture results from the small amount of starch present in the kernel, so be sure to stay vigilant during the cooking phase so as not to overcook.)

And while it can be used for other applications, it works best as the corn to achieve that coveted, ethereal tortilla puff. In fact, there are few varietals that compare to its otherworldly softness and ivory hue — so much so, that it’s earned the ubiquitous nickname chalqueño cremoso.
