For those unsure where to start with whole kernel corn varietals, look no further than the olotillo. Grown in the mountains of coastal Oaxaca, the white olotillo delivers an earthy, balanced masa with a deep corn flavor unmatched in the traditional American palate. It tastes like corn should.

 

The olotillo also makes for an excellent table tortilla, thanks to its light, floury starch. And because it doesn’t absorb excess oil when fried, it stands unrivaled as the go-to corn for tostadas, totopos and any other frying applications.
