Heirloom Xocoyul Pink Corn — Xocoyul Rosado

The Xocoyul rosado thought to be a varietal of the chalqueño family — a native maize variety found in the high valleys of central Mexico. The chalqueño kernel is characterized by its light and fluffy starch, which makes for perfect tamale masa and a soft, pliable table tortilla. But the Xocoyul rosado is not just any old corn. Its smooth, nutty flavor shines in both sweet and savory applications, and the purplish-pink hue of the masa is unmatched in any other corn landrace. Cooked and nixtamalized, the Xocoyul hits the nose with notes of raw sugar cane and Thompson raisins. 

This varietal truly has everything, and given its rarity, we’re lucky to have snatched this up to share with you all. 

This lot of pink heirloom corn was grown by Masienda partner grower Don Fernando in the state of Tlaxcala, Mexico.

All corn from Masienda is completely non-GMO grown on small farms using regenerative agricultural practices. It has never been treated with pesticides or fumigants.

Every heirloom corn varietal comes from hand-selected seeds preserved by farmers for hundreds (and sometimes) thousands of years, with the flavor and quality of the corn further perfected with each passing generation. Heirloom corn is nothing like the hybrid corn that makes up 99.9% of what we know in the US (even the organic stuff): it’s the OG superfood.
