Heirloom Yellow Chalqueño Corn— Chalqueño Amarillo

Grown in the highlands of Tlaxcala, in the rich, volcanic soils moist with winter rain, the chalqueño landrace boasts the creamiest, softest and most buttery table tortilla. This is God-tier masa, people. (The pillowy texture results from the small amount of starch present in the kernel, so be sure to stay vigilant during the cooking phase so as not to overcook.)

And while it can be used for other applications, it works best as the corn to achieve that coveted, ethereal tortilla puff. Unlike its sister varietal, the chalqueño cremoso, the chalqueño amarillo has a color reminiscent of melted butter with a subtle nutty flavor that comes second to its texture. Think of it as the blanco‘s creamy blonde twin that works better as a baked barbacoa flauta.
