Just prior to the COVID-19 crisis, Breadtopia moved to a new facility and now, due to health safety concerns, all organic certification inspections have been put on hold in our area. Our prior facility was certified organic and our new one will be as soon as inspections begin again. Until that time, know that we are still sourcing exactly the same certified organic grains from the same producers we always have, and we are packaging and milling with the same procedures we have always used. We just can’t call it “certified organic” until we can get our new facility inspected and certified.

This is high extraction Einkorn wheat flour milled and sifted from einkorn berries sourced from a small family farm in the U.S. Midwest. We locally stone mill the whole berries into flour and bolt it upon order so it’s maximally fresh when you receive it. 

About bolted flour:

Bolted, or high-extraction, flour is whole grain flour with some percentage of the bran sifted out, which makes it a nice compromise between hearty 100% whole grain and all purpose white flour. It’s ideal for when you want a lighter loaf or dough yet wish to retain the high nutrition found in the germ of the wheat berry.

When you choose organic stone milled grains and bolt them to achieve your desired texture, you have an ideal flour for many applications.

Einkorn is the earliest form of cultivated wheat, dating back about 10,000 years and also allegedly found in the tombs of ancient Egypt. It is unique in flavor, nutritional benefits and genetic makeup. Where modern wheat has 42 chromosomes, Einkorn has only 14.

Some Additional Einkorn Attributes:

  • Einkorn is about 50% higher in protein than modern wheat yet its gluten structure makes it tolerable by some people with wheat sensitivities.
  • Einkorn has 3 – 4 times more riboflavin (vitamin B2 which stimulates the metabolism and assists in the digestion and absorption of fats, carbohydrates and proteins) than modern wheat
  • 3 – 4 times more beta-carotene (an antioxidant that plays an essential role in cell division, reproduction, bone growth, vision, skin health and strengthening the immune system).
  • 3-4 times more lutein, an antioxidant and necessary component of normal vision.
  • Significantly higher levels of vitamin A than other wheats.
  • Einkorn is also a great source of minerals including zinc, manganese, potassium, phosphorus and iron.

 

Note: Since this flour contains wheat germ and wheat germ is an oil, this flour will not keep for as long as typical commercially milled white flour. Do not purchase more than you expect to consume within a few months. We mill fresh within a couple days of shipping. We recommend keeping your flour in air tight packaging or container and storing in a cool place or preferably the refrigerator or freezer.

    Love this flour! Einkorn has a delicious flavor, and is gentle on the gut compared to other flours I’ve used.
    There is a learning curve when used in baking bread, but it makes the best cookies and crepes without any differences from regular flour in use.

    Adding my review for those with wheat/gluten allergies. I am allergic to some proteins in modern wheat as opposed to gluten itself, and was able to eat this without any issues, so five stars for that and flavor. I’m only docking one star as a cautionary tale to others new to bread making. Do yourself a favor and look up einkorn baking tips before you start. This flour is a diva, and I was in over my head by choosing it as the flour for the 2nd loaf of bread I’ve ever made. It’s worth it, but realize you’re starting in “advanced mode” when baking bread with this flour.

    Totally delicious! I made my German grandmother’s pancake (crepe) recipe, and finally I had pancakes that didn’t taste bitter. Before, I would use regular store-bought all-purpose flour, and all my baked goods made from wheat flour — pancakes, cookies, pie crusts — always tasted bitter to me. I remembered much better tasting food from when I grew up in Germany. Now I can’t wait to try making cookies with this flour! The flour is a beautiful creamy yellow color, and the pancakes I made had a delicious, wholesome flavor, and were very satisfying to eat.
