Just prior to the COVID-19 crisis, Breadtopia moved to a new facility and now, due to health safety concerns, all organic certification inspections have been put on hold in our area. Our prior facility was certified organic and our new one will be as soon as inspections begin again. Until that time, know that we are still sourcing exactly the same certified organic grains from the same producers we always have, and we are packaging and milling with the same procedures we have always used. We just can’t call it “certified organic” until we can get our new facility inspected and certified.

This Malted Barley Powder is 100% pure diastatic malted barley flour which has been milled from the whole malted barley kernel — the husk, endosperm and germ. Nothing else is added, no sugar or fillers of any kind.

Diastatic Malt Flours contain naturally occurring active enzymes that function as natural dough conditioners in yeast fermented dough. It is used for promoting a strong rise, adding a mild natural malt flavor and enhancing appealing crust browning. It is good for Baked Goods, Bagels, Crackers, Pizza Crust, Pretzels.

Professional bakers also find it useful for providing uniform and improved fermentation and improving machinability and extensibility. Enzymatic digestion of starch increases fermentation, relaxes the dough, decreases proofing time, increases volume, enhances browning and softens the crumb. Malted barley is a natural humectant that helps extend product shelf life.

Use: Mix with dry ingredients and use only a small amount. Follow recipe or use about 1/2 tsp per 3 cups of flour. In Baker’s Percentage terms, do not use more than .5% by weight of total flour.

Storage and Shelf Life: Store at temperatures of <90 ºF. The current stock we’re shipping is good through at least Nov 2024. A small amount goes a long way. Most home bakers will be fine with an 8 oz bag. The 10 lb bag was added for commercial bakeries.
