Strawberry Rhubarb Einkorn Crumble
Einkorn wheat makes a wonderful crumble with a summer harvest of strawberries and rhubarb. The delicious and fiber-rich einkorn topping has the flavor and feel of pie without requiring the delicate handling needed to roll out an ancient wheat crust. Enjoy the sightly sweet, delicious nutty flavors of einkorn or try another ancient grain, and feel free to add some sourdough starter to the crumble for tasty fermentation flavors as well.

I baked this crumble in a 9-by-13-inch glass baking dish. If you use a metal pan, the cook time will likely be shorter. You can also use a deep pie pan if you multiply each ingredient by 0.66 (for example 1.5 tsp x 0.666 = 1 tsp). Any pan can be filled more for a thicker crumble, but you will need to bake it longer and also place a baking sheet under the pan to catch any spillover when the filling starts boiling. The crumble is done baking when it has some browned areas and the fruit is bubbling through.
This recipe was inspired by my early summer garden harvest and the strawberry-rhubarb crumble recipe of Smitten Kitchen. I scaled that recipe up, swapped out the all purpose flour for whole grain einkorn flour, and also increased the relative amount of flour to accommodate einkorn’s low absorbency of liquids. Finally, I added the option to use some sourdough starter in the crumble for additional complex flavors.

Strawberry Rhubarb Einkorn Crumble
Strawberry-rhubarb einkorn crumble is an absolutely delicious, fiber-rich summer dessert. You get the flavor and feel of pie, but a crumble is much easier to make especially with ancient whole grain flour. You can even add sourdough starter to the crumble for some fermentation flavors. Serve with vanilla ice cream or enjoy it plain.
