Versatile Yeasted Bread
Here’s a basic bread that should appeal to a wide range of tastes. It’s pretty great by itself yet flexible enough to take in a few directions. As you’ll see in the video, the dough is well suited as the basis for creating exciting variations. Add jalapeño & cheddar, parmesan & olives, dried sweetened cranberries & pecan pieces, or any number of options. Roll the dough into 50 gram balls and bake some killer dinner rolls. Play the happy scientist and see what you can divine.
Between watching this and the Episode 1 videos, you’ll start to get a sense for how the consistency of the dough affects the results. With minimal hands on practice you’ll quickly get to know how much or how little flour to add to achieve your desired outcome. In this Episode 2 video, I take the dough to the wetter end of a workable range. That’s where I usually like it, but you might be happier adding another roughly 1/2 – 3/4 cup more flour, making the dough easier to handle. The most important thing is to have fun with it and don’t fret the results.
In our next (Episode 3) video, we’ll take off from this one with a few easy adjustments to create a soft sandwich loaf that works well for almost anyone.
