Almost Granola Bar Cookies
Pima club wheat or o’las pilkan is a creamy and delicious soft white wheat that pairs well with oatmeal in these tasty, fiber-full cookies. The cookies are so full of chewy goodness that I think of them as almost-granola-bars.
I arrived at this recipe several years ago by adapting a chocolate chip oatmeal cookie recipe and substituting my own preference for rolled oats rather than the more commonly used quick oats. I prefer as much oatmeal chewiness as possible! Then when I got a Mockmill in 2017, I swapped out the original all purpose flour for fresh-milled soft wheat flour, and then added walnuts and tart dried cherries.
My instructions suggest whisking the dry ingredients together before adding them to the batter, but I also like to add the baking soda and salt into the mixer while it’s creaming the butter-sugar-eggs, and then I mill wheat directly into my mixing bowl.
I often use Pima club or einkorn wheats in these cookies. Club wheat is a subclass of soft white wheat that thrives in dry conditions. It has a small, compact berry and a low protein content, which makes it ideal for quick breads, cakes, cookies, and pastries. Low protein flours make tender baked goods and are less at risk of developing gluten strength during the mixing process.
Other wheat varieties would be delicious as well though, (e.g. emmer, spelt, soft white wheat…etc.), and if used in whole grain flour form, they will still make a tender cookie, but you may need to add a tablespoon of water to the batter with some of the harder varieties. We went all in on flavor and texture with these cookies, using whole grain Pima club soft wheat flour, rolled oats, walnuts, dark chocolate, and tart cherries. The fiber content makes the cookies "almost-granola bars" -- and they're probably more healthy than some granola bars on the market! -- but no doubt these cookies are still a special treat, especially if you put in all the optional ingredients in italics.
