These are whole unmilled Pima Club Wheat berries received directly from Ramona American Indian Farms in Arizona.
Pima Club wheat is a soft white spring wheat introduced to the American Southwest over 300 years ago and grown by the Pima on the Gila River Reservation.
Pima club is low in gluten forming proteins. This characterizes it as a “soft” wheat. As a soft grain it grinds easily to a lower gluten flour ideally suited for making delicate cookies, cakes, waffles, muffins, pastries, tortillas and other flat breads. Run it through a flaker for a tasty alternative to rolled oats for oatmeal cereal.
