Classic Gluten Free Shortbread
This was my go-to recipe when my kids were growing up. It provided bountiful snacks for play rehearsals, soccer practice, cello concerts, and volleyball games. The shortbread is so quick and easy to make you can make a batch in 30 minutes as long as your butter is softened. (When crunched for time, I’ve been known to soften butter in the microwave for a minute or so on the lowest setting.)
Now that my kids are grown, I serve this shortbread with tea or coffee, or cut in squares as a dessert with mixed berries or a scoop of ice cream.
