Gluten Free Gingerbread
Studded with nuggets of candied ginger, this is a lovely, warming treat for cool days. The candied ginger in this recipe, while not essential, adds a chewy zing. I like to use the plump ginger cubes (as opposed to the flat ginger strips) because they’re a lot more moist. You can also use ginger chips, available through Ginger People, though those tend to be little drier.
I usually serve this with a dollop of lightly sweetened whipped cream.
