Gluten Free Oatmeal Raisin Cookies
Chewy oatmeal raisin cookies are the ultimate comfort treat in our house. Use plump raisins like Red Flame to keep these moist.
These never last long in our kitchen, but if you’re lucky enough to have some left over (or if you make a double batch), you can store them in the freezer and defrost a few at a time. If you have the leisure, try popping the frozen cookies in a toaster oven for about 4 minutes at 350°F.
For a little variety, you can substitute pecans for the walnuts and dried cranberries for the raisins.
