Pumpkin Spice Latte Donuts
Cinnamon, cardamom, and nutmeg combine with pumpkin puree and khorasan wheat flour to make these unique and delectable baked donuts. Use a simple and less sweet cinnamon-sugar coating or try the caffe latte icing for a more decadent experience.
High extraction khorasan flour adds a delicious buttery flavor as well as extra nutrients to the donuts. Khorasan has a high mineral concentration especially in selenium, zinc, and magnesium, and it has 20-40% more protein compared to modern-day wheat. Of course, you can substitute other wheat varieties, or use a whole grain or refined flour by simply adjusting the hydration a bit with a smidge less or more flour.
