One of the many flours I have sampled as someone who is sensitive to modern wheat varieties, but can generally tolerate heritage flour. I was able to stomach bread made with this flour without any adverse reactions (not so for Turkey Red). This flour has a delightful hint of cinnamon, which I’ll admit didn’t quite appeal to me in the sourdough I made with it, but I imagine it would taste delightful in cinnamon rolls or any other sweet bread.
