NOTE: We are temporarily not allowed to call this product “certified organic”. Just prior to the COVID-19 crisis, Breadtopia moved to a new facility and now, due to health safety concerns, all organic certification inspections have been put on hold in our area. Our prior facility was certified organic and our new one will be as soon as inspections begin again. Until that time, know that we are still sourcing exactly the same certified organic grains from the same producers we always have, and we are packaging and milling with the same procedures we have always used. We just can’t call it “certified organic” until we can get our new facility inspected and certified.

I am making my way through Breadtopia’s flour collection in search of heirloom wheat that I can eat since I have a non-gluten wheat sensitivity. Sadly this one did not make the cut for myself and another wheat-sensitive friend. My reaction was less than it would have been with other modern flours, just a little bit of “bleh” feeling and gurggly stomach after the first slice. but still too much to be able to eat this regularly. Otherwise, great product. I will be leaving reviews on their other flours as I try them for all you wheat-sensitive folks on the journey of bread making!

Wanted to bake with heirloom grains, but have hesitated due to cost. Gave this a try, and while expensive, this worked GREAT. Baked bread, and while gluten development is not like ‘G@ld M3dal’ flour (and the like), the bread produced had much better flavor and worked out nice. Made pizza, and the pizza dough was difficult to work with (less gluten, less stretch) but the resulting pizza dough was great. Made pasta recently, and a big thumbs up.
