Vegan Cornbread
On New Year’s Day, we’re eating peas for pennies, greens for dollars, and cornbread for gold. I’m referring to the southern custom of eating black-eyed peas on New Year’s Day, often served with collard greens and cornbread, for good luck and prosperity. You can learn more about the tradition in this “Southern Living” article, and here’s a recipe I like for black-eyed pea soup. It even has tomatoes, which are supposed to bring good health along with all that fortune.

Breadtopia already has a relatively traditional cornbread recipe here. It uses fresh milled corn and white sonora wheat flour, but storebought corn flour and all purpose flour are options too. For this recipe, I decided to make the cornbread vegan and use red corn for a different color and deep corn flavor.
The Bloody Butcher corn that I milled for this cornbread is a mix of dark reds, oranges, and yellows. This corn variety is grown in the U.S. and like corn grown all over the world, it descends from landrace varieties in Mexico that have had thousands of generations of selective breeding to adapt to local conditions. I learned this and more from the book “Masa,” by Jorge Gaviria, published this past year.
In this recipe, you can also use other varieties of corn and even masa harina i.e. nixtamalized corn flour. Masa harina is more absorbent than regular corn flour, however, so you’ll likely need more liquid in the batter. It’s also fine to use non-vegan milk, butter, and egg in this recipe if you prefer, as well as whole wheat flour instead of all purpose flour.
