Whole Wheat and Rye Chocolate Chip Cookies
Using whole grain flours in sweets like cookies is a no-brainer to me. Whole grain flours offer more fiber, protein, vitamins, and minerals compared with white all purpose flour, but another huge incentive to use fresh whole grain flour is flavor. Depending on the grain you choose, your cookies can have added flavors of floral grasses, cinnamon and baking spices, creamy lactose, and nutty oleogustus. All of these possibilities make cookies more interesting and far more satisfying.
Here’s our whole grain riff on the classic recipe on the bag of Nestlé chocolate chips. We’ve substituted the all purpose flour with a super-tasty ratio of hard white wheat and bono rye, adding subtle cream-of-wheat and floral grass flavors.
