Chia Crusted Einkorn Sourdough Bread
This sourdough bread recipe satisfied my craving for einkorn wheat and chia seeds, and it provided a lovely dough to work with when trying to stencil with seeds instead of flour or cocoa powder. I didn’t even realize how awesome the flavor and texture of the chia seed crust would end up being. It’s delicate and crispy, perhaps because of the seeds’ small size and high fat content. So I plan to try it on other breads in the future, with and without stenciling.
I prefer to attach rolled oats, flaked grains, and seeds to dough at the end of the shaping stage. I brush or spray the dough with water, roll it on the spread-out topping, and place the dough into the proofing basket, topping down. This gives the dough an even coating of seeds and they’re nicely stuck, almost embedded, in the dough by the time you bake it. With this technique, the bread ends up looking neater and so does your kitchen, with far less seed mess when you slice and eat the bread.

The bulk fermentation of this bread very quick (3-4 hours for me) because of the large amount of sourdough starter and the Raisenne dough riser, which is a heating pad. You can use much less sourdough starter or a cooler first rise if you prefer. For example, if you want to use only 70 grams of sourdough starter instead of 130 grams, simply add the missing 60g of sourdough starter to the dough as plain flour and water (30g of each).
