Raspberry Pistachio Pinwheel Cookies
These raspberry and pistachio pinwheel cookies are delicious and festive, perfect for the holidays. They’re made with khorasan whole grain flour, which is a little sweet and nutty, and so tasty. Kamut whole grain flour and durum whole grain flour will yield similar results if you have them in stock, and other flours are fine to use too, though you should be sensitive to hydrating the flour you choose. We have an article on converting baked sweets to whole grain flours that does a deep dive into this subject. In short though, for thirsty flours (hard red wheats), add more teaspoons of water; and for less thirsty flours (einkorn, white flours, some high extraction flours), remove the teaspoon of water from this recipe as a first step, and add more flour only if still needed (1 tablespoon/8g at a time). The real key to success with these cookies is chilling the dough twice, once after mixing and again after rolling the dough and filling into a tube. The raspberry jam in these cookies is store-bought, but if you have homemade jam, that is perfect for choosing the sweetness you prefer, and we’ve included instructions for a no-added-sugar date filling. The bottom line is that you should feel free to play with different combinations of jams and nuts, or use no nuts at all.

You can freeze the dough for up to three months in the tube stage of the process, wrapped tightly in plastic. Let it thaw for a few hours at room temp before slicing and baking.
