Sourdough Calzones
I love nutritionally complete “meal breads,” and these calzones fit that description for me. The dough is 1/3 sprouted whole wheat flour. The filling is packed with spinach and broccoli as well as tasty cheeses and a small amount of meat. Finally, the homemade marinara for dipping adds spiciness and acidity to complete the flavor experience.
This is almost the same dough that’s in our stromboli recipe and you can find additional filling ideas in that blog post. Meanwhile, the marinara here is essentially the New York Times classic marinara recipe by Lidia Bastianich, adapted by Julia Moskin. It’s been further adapted by me with less salt and olive oil, and a little more oregano. Plus optional red pepper flakes.
Feel free to substitute wheat varieties in the dough and ingredients in the filling (for example, ham instead of prosciutto). I normally wouldn’t cook prosciutto, but it’s what I had in my refrigerator during a blizzard, and I discovered that this flavor combination was delicious.
Cheesy rich interior with a tangy dipping sauce
The salt amounts I give below are ranges. In the filling, the types of cheese and meat you use (or omit) impact how much salt you’ll want. For the marinara, I tend to salt to taste as well, because different brands of canned whole tomatoes have different amounts of salt in them.
In the photo gallery after the recipe, I show the dough at the end of the bulk fermentation. It has approximately doubled. I’d suggest even more fermentation for this dough because you don’t want the calzones to be too poofy. In fact, over-fermented dough is perfectly fine for calzones.
Sourdough Calzones
These sourdough calzones are vegetable-packed pockets of flavor for dipping into tangy marinara sauce. The cheese, egg, and small amount of meat make the calzones extra filling and delicious, but these ingredients can easily be skipped for wonderful vegetarian or vegan options.
