Twisted Spinach Bread

The recipe below explains how to make the dough, filling, and sauce for one large twisted bread (about 4 for dinner or 12+ for appetizer), but you should feel free to play with the size and twistiness of the bread, as well as your flour choices and filling ingredients.

The dough and filling for this bread are versatile and can even be prepped ahead and refrigerated until about an hour before shaping and baking. We used khorasan high extraction flour and bread flour here, but infinite flour combinations will work. Wheat flours with some gluten strength make for easier rolling, cutting, and twisting — as does the dough’s relatively low hydration of 66%. This dough is similar to Breadtopia’s calzone and stromboli, and the doughs can be used interchangeably.
