Using a total hydration around 85% (sourdough starter included), this dough produces a relatively open crumb and has a manageable consistency. You can use 20-30g less water if this hydration sounds daunting or if you prefer to do a room temperature final proof. (Refrigeration stiffens dough, making it feel less floppy.)
