The ThermoWorks DOT Thermometer with Probe is a professional tool featuring molded-in, splash-proof seals and commercial grade plastic body that will survive messy kitchen hands. Includes a tilt-out stand for counter use and strong magnets for metal surfaces.
To use, simply set your target temperature with the up or down buttons, insert the probe in your food, and the DOT beeps when it reaches the desired temp. The DOT uses any of the Pro-Series probes designed for our popular ChefAlarm. The included 4-inch probe reads temperatures up to 572°F with a cable that withstands 700°F for broiling or grilling.

I use this for my rye sourdough (70% rye flour), which might be a little more variable than other breads.
I put the probe into the center of the loaf when I remove the clay pot lid. When it reaches 190 degrees (and I set the device’s alarm to let me know, it’s impossible to miss), the loaf is perfect (I’ve tested this three times now). This beats opening the oven door and testing using a wooden skewer or instant read thermometer or similar methods.
This is a great little instrument and has uses other than bread making, so I figured “why not get yet another gadget”.
They should include the optional pot clips since the DOT is great for monitoring the temperature of a stovetop concoction. The clips can be ordered from the manufacturer’s web site (they’re very inexpensive, so they should have just packaged them with this item — on the plus side, it’s only $4 for the clip plus $3 for shipping; I got both types of the clips and they both work).
The probes are very sturdy (their “pro” line) should survive pretty much anything this side of an open flame. But they sell replacements as well. Cleanup is easy.
