Brie Flower Bread Rolls
This bread rolls-and-cheese recipe has a big wow factor in terms of flavor and presentation, and it’s easy to make. With oozy decadence from the cheese center and an optional sugar-nut glaze, these brie flower bread rolls are great for holidays and dinner parties. Of course, in testing recipe variations, my family of five always managed to eat the entire creation in one sitting, so don’t feel you have to save this for special occasions or large events.
About a year ago, I came upon a video by Tastemade with Camembert cheese and nine bread rolls: All-In-One Baked Camembert With Bread Rolls. Since then I have been playing with the recipe. I’ve done fun math to get various roll numbers and geometric arrangements in order to accommodate different crowd sizes, and I’ve even made non-dairy versions with a bread rosette in the middle.
More recently, I added Paula Deen’s Sugar and Nut Glaze to the cheese partway through the bake, and I developed a sourdough version that has a nice tang, which pairs well with the sweet glaze.
Another aspect I’ve played with was cheese type, specifically Camembert versus Brie. Camembert is softer and more intense in flavor. Brie is a little saltier and less funky, also firmer but more oily when heated.
I ended up preferring Brie, but it is up to personal taste which cheese you use. Do note that the rind of Camembert is soft and you don’t need to cut off the top. You can simply make cuts into it, so it’s easy to scoop, and also so the glaze seeps in if you’re doing the glaze. With Brie, it’s best to cut off the top. The remaining rind melds into the interior when baked, and is edible and delicious. With either cheese, I like to set out a couple of small spoons for people to use when serving themselves.
All versions are best devoured warm and soon after baking, but they can be set aside for a few hours and eaten at room temperature.
