Naturally Leavened Khorasan Sandwich Bread
Khorasan sandwich bread is soft and flavorful, and it makes delicious toast and sandwiches. This ancient grain has a golden color and a smooth, buttery flavor. Khorasan is high in protein and has moderate gluten strength. This recipe is for an enriched dough with milk, oil, and honey. This results in a texture that is more delicate than our “flour-water-salt” khorasan sourdough bread recipe but the dough is still quite manageable. The flavor is delicious and the degree of sourness can be controlled through the temperature and duration of the final proof.

The stone ground khorasan high extraction flour used in the recipe is about midway between refined flour and whole grain flour, making this bread both nutritious and appealing to people who prefer white bread. Khorasan wheat is also grown under the trade name Kamut® and is a distant relative of durum.
To make this bread, you can buy high extraction khorasan flour, which has been stone milled and already sifted, or you can buy khorasan wheat berries to mill yourself, and a #40 or #50 sifter to target about 85% extraction. This means that you sift out 15% of the weight of the flour that you mill from the khorasan berries. You can also make this bread with whole grain khorasan flour. Simply use 15-20 grams more milk in the dough.

This soft sandwich bread has a beautiful golden color and a buttery and very slightly sweet flavor. It's perfect for sandwiches and toast. The dough uses ancient khorasan wheat high extraction flour, which means it is stone ground and sifted to be midway between "white" and whole wheat.
