Make your own high extraction flour and save $2 by purchasing the 40 mesh and the 50 mesh sifter together.
High extraction (or bolted) flour is whole grain flour with some percentage of the bran sifted out. Great for achieving a light loaf without compromising the nutrition found in the germ.
It’s amazing how much coarse bran can be sifted out of a few cups of whole grain flour using this simple mesh strainer. It’s a prudent alternative to a grain mill attachment, plus it’s far more reasonable to make high extraction flour as you need it (rather than buying it bulk and risking spoilage).
For a finer flour texture, sift flour once though this 40 mesh sifter. For a super fine flour, sift again though the 50 mesh sifter (sold separately). It is fairly quick and easy to sift flour through the 40 mesh screen. You will end up with a flour texture that is quite fine, without “losing” a lot of material. The 50 mesh sifter, on the other hand, takes a good bit longer to pass the flour through and quite a lot of material is separated. Most people are fine with the results achieved from using the 40 mesh sifter only. But for those who want something approaching a 00 flour or cake flour, passing flour through the 50 after the 40 is the way to go.
